What should I do first when food spills on clothing?

Blot gently with a dry cloth — never rub, and do not apply water until you know the fabric and the stain. Rubbing spreads stains and pushes them deeper; water sets some stains and watermarks silk permanently. Lift any solids, blot, and get the garment to a professional quickly. Fresh stains are far easier to remove.

Does hot water remove stains better?

Often the opposite. Heat permanently sets protein stains like blood and egg, dye stains like Holi colour, and tannin stains like wine and tea. Cold water is the safer default for almost every fresh stain.
